Cucumber and Egg starter (low fat)
- ½ large cucumber
- 3 eggs, hard boiled
- 150ml natural yoghurt
- 2 tbsp chopped chives
- Salt and pepper to taste
Preparation
Peel and dice the cucumber. Finely chop the hard boiled eggs once they cooled. Combine the cucumber, eggs, yoghurt and chives and season with salt and pepper. Chill for 1 - 2 hours. Serve as portions on lettuce leaves.
