Rainbow Chicken (serves 4)
- 4 chicken thighs
- 1 red, 1 yellow, 1 green pepper
- 1 onion
- ½ glass white wine or beer
- Rosemary
- Dried crushed chillies
Preparation
Heat a pan and add 3 tblsps of olive oil, after 2 minutes place the 4 chicken thighs in the pan and cook until golden on the outside (10 minutes) , if you like you can add some dried crushed chillies at this point.
In the meantime slice the onion and cut the peppers into chunks.
When the chicken is golden add the wine/or beer and leave it to evaporate for 2 minutes then add the onion and the peppers, reduce the heat and let it cook for another 20 minutes. Season with salt, a pinch of rosemary and drizzle with olive oil. Serve warm.
